In this Phuket Hotel Promotions news report, the spotlight falls on internationally acclaimed designer Éric Raisina, who will collaborate with The Slate’s culinary team for two distinctly different evenings. The programme moves from an elegant six-course dinner and couture presentation at Rivet & Rebar to a vibrant night of fashion, cocktails, street food and cabaret at Coolies Club.

Couture Meets Cuisine at Rivet and Rebar

On 18 September, Madagascar Dreams a Journey of Couture and Cuisine will transform Rivet & Rebar into a showcase of Raisina’s homeland. Madagascan vanilla, wild pepper, cacao, seafood and tropical fruits will influence the culinary experience, while Raisina introduces the courses before unveiling his latest couture collection accompanied by strings, jazz and Afro-acoustic music.

The six-course menu opens with Fire & Spice, featuring Malagasy beef sambo, crab accra and piment farci. This is followed by Charcoal-Grilled Octopus with passion fruit emulsion, charred pineapple, smoked chilli oil, fresh herbs and lime.

Madagascar River Prawn Curry brings together river prawn, coconut curry, curry leaves, toasted spices, vanilla, citrus and green mango. Next comes Charcoal-Grilled Barracuda, accompanied by bilimbi and tomato relish, turmeric, ginger, garlic and smoked olive oil.

The main course is Wood-Fired Beef Tenderloin, inspired by Madagascar’s renowned zebu beef and finished with vanilla and black pepper jus. It is served with braised pork civet, lentils, green papaya salad and steamed rice.

Dessert arrives as Madagascar Chocolate Ember, a warm dark chocolate fondant served with vanilla bean ice cream, grilled banana, passion fruit caramel, roasted peanuts and cocoa nibs.

The evening costs THB 2,500++ per person for dinner and the show, or THB 3,500++ including wine pairing and the show. Prices are subject to 10% service charge and 7% government tax.

Madagascar Takes Over Coolies Club

On 19 September, the mood becomes more theatrical with The Celebration Dance with Madagascar at Coolies Club. Raisina’s colourful couture will meet music, movement and a Madagascar-inspired Chinoiserie cabaret.

Guests can expect bar bites, sharing plates and street-food creations alongside cocktails incorporating flavours including vanilla, lychee, rum, tamarind and ginger. The experience is priced at THB 2,000+ per person, including food, cocktail pairing and the show, with 7% government tax applicable.

A Bold September Showcase

With two contrasting evenings, The Slate Phuket is positioning BOLD Madagascar Reimagined as much more than another themed dinner. By weaving fashion, Madagascan culinary traditions, contemporary resort dining and live entertainment together, the event promises an unusually immersive cultural experience for Phuket visitors and residents alike.
